Our Black Angus Stew Meat is a lean, versatile cut. It is dry-aged 21+ days, adding additional flavor and tenderness. The meat is cut into 1" - 1.5" cubes and vacuum sealed into 1lb. packages. Although named "Stew Meat" we use this cut for a wide variety of dishes, including sliced thin in Asian dishes, pasta dishes, stroganoff, soups & stews- the sky is the limit. We like to apply a heavy sear on high heat, then braise it in a dutch oven with beef broth and/or wine and herbs for an hour and a half in the oven.
