The Bavette is from the sirloin, a boneless rich and flavorful cut, also called Flap Steak. If you've never had a Bavette Steak, think Skirt Steak, but thicker. Our Bavette Steaks are dry-aged 21+ days adding additional flavor and tenderness. Bavette Steaks are great marinated/or seasoned and grilled or broiled.
